During the Major Cold period, what is good to eat?

2025-01-20

Today (January 20, 2025) marks the last of the twenty-four solar terms, "Major Cold," indicating that the weather is at its coldest. During this period, it is beneficial to consume dishes made from the following vegetables:

1. Tomato

Tomatoes are rich in vitamins A and E, and they also provide antioxidant vitamin C, which helps the body absorb iron and calcium. Additionally, the carotenoids and lycopene in tomatoes can prevent cancer and enhance the immune system.

Ways to eat: Tomato scrambled eggs, tomato soup noodles, and fresh tomato beef stew.

2. Carrot

Carrots are high in carotenoids, which have antioxidant properties that help maintain bodily resistance and prevent night blindness.

Ways to eat: North-South almond pork knuckle soup with carrots, carrot pumpkin soup, and three-shredded salad.

3. Beetroot

Beetroot contains unique antioxidants like betacyanin, which helps boost the immune system and prevent various cancers. It also has a moderate amount of soluble fiber and potassium, which can lower the risk of cardiovascular diseases.

Ways to eat: Beetroot carrot burdock soup, beetroot pineapple juice, and beetroot cabbage dried apricot lean meat soup.
